As good as bread

Davide Minervini Architect has renovated a small commercial space located in the San Salvario district of Turin, transforming it into a contemporary and colourful bakery.
Forno Belfiore is located on the ground floor of a historic building and consists of only 25 square metres to be dedicated to a sales area, a bakery workshop, a warehouse and toilets with changing room.

The aim of the project was to transpose the special artisan nature of the customer’s bakery activity into a commercial layout compressed within a layout strongly constrained by the dimensions of the premises and the hygiene regulations of the city of Turin.
This small shop, overlooking a public street, is the materialisation of the relationship between the client, the city and its customers. The transparent, sliding partition dividing the sales area from the kitchen/laboratory allows passers-by to see the preparation of organic and artisanal products and the hands at work of those who produce them.

Forno Belfiore’s genuine and natural products were the inspiration for the choice of materials; this is why the shop is composed in the space with the use of solid wood, original plaster and flooring, and hygienic unpainted and washable surfaces. The displays and sales counter were designed specifically for the shop and made by local craftsmen.
The colours were chosen to convey a sense of cosiness and domesticity. The back wall, the same colour as the ceramics used to line the sides of the workshop, serves to contrast the other elements on the sales front and to enhance them and the height of the vaulted ceiling.

The very small Forno Belfiore in San Salvario in Turin is a puzzle solved by functional and production requirements, compliance with regulations and personal demands, and the representation of a craftsmanship that is as small as it is high quality.
